A single, unhurried journey through the world of truffles — from paddock to plate.
Before the truffle discovery hunt begins, gather with farmers Abby & Graham, to learn the mysteries of truffle cultivation — what makes West Gippsland's soil so well suited to growing French black truffles, how a truffière actually works, and how our dogs are trained to detect. It's the context that makes everything that follows make sense.
Head out into the truffière with one of our truffle dogs—Bindi, Lulu or Molly—as they put their remarkable sense of smell to work.. They are constantly in training all year, detecting and locating truffle scent in the truffière. Watch their skils unfold — the pause, the dig, the reveal — and understand just how rare and precise this process really is. Private Group Truffle Farm Tour & Tasting and selected Truffle Hunts for Winter 2027 bookings are available all year
Gather around the fire in the farmer's kitchen to taste the truffle at its absolute best — freshly unearthed and prepared to showcase its aroma and flavour. This is the payoff: experiencing why black truffle is so different from anything you've had before.
Every winter truffle hunt or farm discovery and tasting at Ashridge Truffle Farm is led by one of our three truffle dogs — each with their own nose, their own style, and their own devoted following of past guests. You will meet all three truffle dogs, and one will be leading us on the day.
Bindi is our most experienced hunter, with a nose that rarely misses. Calm, methodical, and utterly focused once she catches a scent, she's the one to watch if you want to see truffle hunting skills at their most precise.
Lulu is our eager new recruit, still building her reputation one truffle at a time. She hunts with real enthusiasm and a growing confidence that's become a favourite among returning guests — everyone loves cheering her on.
Molly is, by popular vote, the most adorable member of the team. Always eager to please and endlessly good-natured, she brings warmth and charm to every hunt — expect plenty of photos.
